Lemony Apple Oat Muffins
1 1/4 c flour
1/2 c brown sugar
1 1/2 t baking powder
1 t baking soda
1 t cinnamon
1/2 t salt
1/4 t ground nutmeg
1 egg
1/2 c evaporated milk
1/4 c oil
2 T lemon juice
3/4 c quick-cook oats
1 c finely chopped oats
1/2 c chopped nuts
- Preheat oven to 400 degrees.
- Combine dry ingredients (including brown sugar) and spices.
- Beat egg and add milk, lemon and oil. Add oats; mix well.
- Add flour mixture, apples & nuts. Stir only until just combined.
- Spoon into lined muffin cups.
- Bake 20 minutes.
- Spoon Lemon Glaze over hot muffins.

1 T lemon juice
1 T melted butter
